Rosewater-Walnut-Muffins

These muffins consist of a soft buttermilk-dough and a walnut-hazelnut-filling. They are topped with some rosewater-icing and a few rose petals. The muffins are ideal for parties, they don’t take much time and are very easy to make!


Ingredients:
Dough:
1 1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup sugar
1 large egg
3 tablespoons unsalted butter, melted
1 1/4 cup buttermilk
Filling:
1 cup chopped walnuts
1 cup chopped hazelnuts
1/2 cup brown sugar
2 tablespoons apricot jam
Icing:
confectioners’ sugar
rosewater
dried rose petals

1.) Either line the muffin pan with baking cups or grease it with butter. Preheat the oven to 400˚F.
2.) Mix the filling together.

3.) In a different bowl whisk the egg and mix in the melted butter and the butter milk. Stir in the dry ingredients.

4.) Spoon half of the dough into the muffin pan. Then add the filling and top up with the rest of the dough.

5.) Bake for 15 minutes until golden brown. Let cool for a few minutes.

6.) Sift confectioners’ sugar and mix in a little bit of rosewater until you have a thick icing. Ice the muffins and add the dried rose petals.
