Summer Salad with Pomegranate and Mint

This delicious salad looks very pretty and also appeals to picky eaters, who usually stay clear from salads. It’s easy to make and a great healthy appetizer or lunch snack.


1 package of pea sprouts
2-3 carrots, chopped
1 red pepper, chopped
seeds of 1 pomegranate
2-3 sprigs of mint, thinly cut
3-4 tablespoons of pumpkin seeds, toasted
apple vinegar
olive oil

Well, it’s very simple: Prepare all ingredients and combine them in a bowl. Add vinegar and olive oil according to taste.
